Celery
Because you know what tastes good… An amazingly light vegetable, celery has a crisp texture and a tangy flavour that improves the taste of the food it is served with. Very versatile, it can be used as an ingredient in a variety of preparations and be enjoyed raw with dip or stuffed with a spread.
A natural elegance… A celery bunch consists of a number of leaved stalks that are crisp, firm and of a delicate green colour.
Good for you… Very low in calories, celery contains lutein, an antioxidant that could prevent the development of malignant tumours. It also contains polyacetylenes, chemical compounds that could retard the development of certain cancers. Celery finally is an excellent source of vitamin K and a source of vitamins C and B6 when boiled.
Celery Worldwide: Enjoyed throughout Europe and North America, celery is also used in preparing many Asian recipes.
Gourmets’ Inspirations:
Consumed as a raw veggie, celery can be served with dips of all flavours or stuffed with a seafood mousse dip, chicken or tuna salad, lentil pâté, cheese, peanut butter, etc.
Extremely versatile as a flavouring, celery can be added to a wide range of dishes and salads: tuna, chicken, eggs, beans, cabbage… It is an excellent seasoning for Asian soups, rice, couscous or even stews, broths or spaghetti sauces.
Delicious in a stir-fry, celery can be mixed with nappa cabbage, sprouts, green onions, bell peppers… As a side-dish with meat, it may be served steamed, boiled or braised in broth or consommé.
Its highly aromatic leaves can be saved to season soups, broths and salads.
How to Select Your Celery: Choose celery with firm, crisp ribs topped with fresh leaves. Look for a beautiful green colour and for ribs without brown spots or bruised by freezing.
How to Store Your Celery: Keep your celery refrigerated, inside a plastic container that will prevent its distinctive fragrance from spreading to other foods. To avoid wilting, add a little water to the container. To freeze celery, blanch stalks for 2 to 4 minutes and freeze them on a metal plate before transferring them into a plastic bag. As for celery leaves, they may be dried in the oven, or hung in a dark and dry place. Once dried, they must be kept away from moisture, light and heat.
Savour it… during a large part of the year. It is actually available from the middle of July to the middle of October (production of Quebec, Canada) and from February to April (production of Mexico).
Did you know… that celery is considered as a negative calorie provider? Actually, to digest celery requires more energy than that provided by its consumption. As you can see, celery is the perfect vegetable for a diet!
