Green Cabbage

Because you know what tastes good… Well prepared, green cabbage is delicious as a side dish or in recipes from all around the world. Easy to prepare, it can be served raw or cooked, in a salad or marinated, grated or stuffed, boiled or steamed.

A natural elegance… The crisp leaves of green cabbage form a compact firm head of a pale green colour.

Good for you… Low in calories and high in dietary fibre, green cabbage is an excellent source of vitamin K and a source of vitamin C. Boiled, it becomes a source of vitamin B6 too. Furthermore, green cabbage contains indol-3-carbinol and allyl isothiocyanate, two chemical compounds that could help to delay or prevent the development of certain cancers.

Green Cabbage Worldwide: Almost a universal vegetable, cabbage is prepared throughout Europe and North America. It is also highly appreciated by Asians from the Near East to the Far East.

Could replace… lettuce inside tacos or sandwiches.

Gourmets’ Inspirations:

Raw, green cabbage is excellent in a salad and can garnish sandwiches, tacos, hamburgers or hot-dogs. Grated, it can season soups or stews. You could also use green cabbage to prepare a Caldo Verde, a Portuguese soup made of chicken broth, potatoes and a very rare variety of cabbage here substituted for green cabbage.

Cabbage is served boiled, braised or steamed, seasoned with cumin, nutmeg or cloves. Be aware that it is better to cook green cabbage in a big amount of boiling water and to drain it as soon as it is cooked to reduce odour; you may also add celery or a walnut in its shell to your water. Shorter cooking times will prevent whiffs of sulphur from developing.

Blanched green cabbage may be stuffed in many different ways, such as the traditional one of making cabbage rolls with rice, ground beef and other vegetables. Finally, another way of enjoying green cabbage is by grilling it on the barbecue, alone or wrapped in aluminium foil with carrots, shallots, onions, potatoes, etc.

How to Select Your Green Cabbage: Choose a cabbage with a firm and heavy head. Look for a beautiful light green color and for leaves that are spotless.

How to Store Your Green Cabbage: Green cabbage can keep for a few weeks, refrigerated in a perforated plastic bag, as it must breathe or it will rot.

Savour it… during winter, from December to March (production of Mexico).
