Spring Mix and Red Pepper Dressing

Ingredients:

Salad

  • 142 g (5 oz) Fresh Attitude Spring Mix
  • 115 g (4 oz) your choice of legumes
  • 55 g (2 oz) Canadian Cheddar
  • 115 g (4 oz) Chicken strips

Dressing

  • 1 L (4 cups) Olive oil
  • 90 mL (3/8 cups) Cider vinegar
  • 2 grilled Red peppers
  • 60 mL (4 oz) Hot mustard
  • 30 mL (2 oz) Lemon juice
  • 10 drops Tabasco sauce
  • 30 mL (2 oz) Sugar
  • Salt and freshly ground Pepper

Preparation:

  1. Grill peppers and dice.
  2. Mix diced peppers in blender.
  3. Add all other ingredients except the olive oil and mix.
  4. Drizzle in olive oil.
  5. Season to taste.
  6. Toss Fresh Attitude Spring Mix and other salad ingredients together.
  7. Add Dressing when ready to serve.
